So while it doesn't have any refined sugar and lower levels overall, they are still extracting sugar out of the cacao fruit's pulp. Translation? It still tastes good, but is a whole lot better for us. According to Nestlé, it's also more environmentally-friendly since they're using part of the fruit that is typically trashed.
'We’re proud to bring chocolate lovers a new chocolate made entirely from the cocoa fruit without adding refined sugar,' head of strategic business units, Patrice Bula, said in a statement. 'This is a real innovation which uses the natural sweetness of the cocoa pulp to provide a pure, novel chocolate experience.'

According to Nestlé, this is the first time the pulp, which surrounds the cocoa beans, has been used to naturally sweeten chocolate. Though, yes, it's normally used as sugar when fermenting them.
The Cocoa Fruit Chocolate is officially launching in Fall 2019, so if you find yourself in Japan sometime this year you can actually try it (and let! us! know!). KitKat will be the first brand under the Nestlé umbrella to incorporate the chocolate. Its debut follows similar innovations, including Ruby Chocolate and Volcanic Chocolate.
